Sturbridge Stuffed Mushrooms

Ingredients

  • 1 pound fresh mushrooms
  • 1/2 cup bread crumbs
  • 1/2 cup grated Romano or Parmesan cheese
  • 1/4 cup dried parsley or 1/2 cup fresh parsley
  • 1/4 cup onion, finely minced
  • 1/4 cup (half stick) margarine
  • Cooking spray

Directions

  • Preheat oven to 400 degrees.
  • Clean mushrooms, trim off the bottoms and remove the stems.
  • Chop the stems and combine them in a bowl with breadcrumbs, cheese, and parsley.
  • Meanwhile, saute onion in the margarine.
  • Combine onion and other ingredients and fill caps.
  • Place filled mushrooms on a baking pan sprayed with cooking spray.
  • Bake at 400 degrees about 15 minutes or until lightly browned on top.
