Sturbridge Stuffed Mushrooms

Ingredients
- 1 pound fresh mushrooms
- 1/2 cup bread crumbs
- 1/2 cup grated Romano or Parmesan cheese
- 1/4 cup dried parsley or 1/2 cup fresh parsley
- 1/4 cup onion, finely minced
- 1/4 cup (half stick) margarine
- Cooking spray
Directions
- Preheat oven to 400 degrees.
- Clean mushrooms, trim off the bottoms and remove the stems.
- Chop the stems and combine them in a bowl with breadcrumbs, cheese, and parsley.
- Meanwhile, saute onion in the margarine.
- Combine onion and other ingredients and fill caps.
- Place filled mushrooms on a baking pan sprayed with cooking spray.
- Bake at 400 degrees about 15 minutes or until lightly browned on top.
