Point Pleasant Pasta

Ingredients
- 1 12 oz. package tricolor pasta
- 3 medium-size red or mixed sweet peppers, sliced
- 2 tsps. extra virgin olive oil
- 1 10 oz. package fresh mushrooms, sliced
- 1 garlic clove, minced
- 1 tsp. oregano
- Grated Romano or Parmesan cheese, as desired
Directions
- Cook pasta in water as package directs; then drain.
- In the meantime, saute pepper slices in olive oil in a large skillet until almost tender.
- Add the sliced mushrooms, minced garlic, and oregano to the peppers; saute.
- Combine the vegetables and cooked pasta.
- Add crumbled feta cheese; stir gently.
- Sprinkle grated Romano or Parmesan cheese on top as desired.
