Point Pleasant Pasta

Ingredients

  • 1 12 oz. package tricolor pasta
  • 3 medium-size red or mixed sweet peppers, sliced
  • 2 tsps. extra virgin olive oil
  • 1 10 oz. package fresh mushrooms, sliced
  • 1 garlic clove, minced
  • 1 tsp. oregano
  • Grated Romano or Parmesan cheese, as desired

Directions

  • Cook pasta in water as package directs; then drain.
  • In the meantime, saute pepper slices in olive oil in a large skillet until almost tender.
  • Add the sliced mushrooms, minced garlic, and oregano to the peppers; saute.
  • Combine the vegetables and cooked pasta.
  • Add crumbled feta cheese; stir gently.
  • Sprinkle grated Romano or Parmesan cheese on top as desired.

Serves: 6
