Pebble Creek Parmesan Tilapia

Ingredients
- 2 tilapia fillets (approximately 6 oz. each)
- Cooking spray
- 2 T. grated Romano or Parmesan cheese
- 2 T. light or fat free mayonnaise
- 1/4 cup onion, minced
- 2 T. dry breadcrumbs
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
Directions
- Preheat oven to 425 degrees.
- Coat baking dish with cooking spray and place fish in dish.
- Combine cheese, mayonnaise, and onions; spread evenly over fish.
- Combine breadcrumbs and remaining ingredients; sprinkle breadcrumb mixture evenly over mayonnaise mixture.
- Lightly coat fish with cooking spray.
- Bake at 425 degrees 15 minutes or until fish flakes easily when tested with a fork.
Serves: 2
Note: Could use any white fish.
