Pebble Creek Parmesan Tilapia

Ingredients

  • 2 tilapia fillets (approximately 6 oz. each)
  • Cooking spray
  • 2 T. grated Romano or Parmesan cheese
  • 2 T. light or fat free mayonnaise
  • 1/4 cup onion, minced
  • 2 T. dry breadcrumbs
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil

Directions

  • Preheat oven to 425 degrees.
  • Coat baking dish with cooking spray and place fish in dish.
  • Combine cheese, mayonnaise, and onions; spread evenly over fish.
  • Combine breadcrumbs and remaining ingredients; sprinkle breadcrumb mixture evenly over mayonnaise mixture.
  • Lightly coat fish with cooking spray.
  • Bake at 425 degrees 15 minutes or until fish flakes easily when tested with a fork.

Serves: 2

Note: Could use any white fish.
