Leedoms Lemon Chicken

Ingredients
- Cooking spray
- 1 T. extra virgin olive oil
- 4 boneless, skinless chicken breast halves
- 1 14.5 oz can reduced fat chicken broth
- 1/2 tsp. oregano
- 1 T. dried parsley
- 2 T. lemon juice
- 1 1/2 cups quick cooking brown rice
Directions
- Coat a large skillet with cooking spray.
- Add the oil and warm over medium-high heat.
- Add the chicken and cook for 5 minutes on each side, or until lightly browned on both sides.
- Add the broth, oregano, parsley, lemon juice, and rice. Bring to a boil.
- Cover and simmer over medium-low heat for 10 minutes or until the chicken is cooked through.
- Remove from the heat and let stand for 5 minutes.
Serves: 4
