Leedoms Lemon Chicken

Ingredients

  • Cooking spray
  • 1 T. extra virgin olive oil
  • 4 boneless, skinless chicken breast halves
  • 1 14.5 oz can reduced fat chicken broth
  • 1/2 tsp. oregano
  • 1 T. dried parsley
  • 2 T. lemon juice
  • 1 1/2 cups quick cooking brown rice

Directions

  • Coat a large skillet with cooking spray.
  • Add the oil and warm over medium-high heat.
  • Add the chicken and cook for 5 minutes on each side, or until lightly browned on both sides.
  • Add the broth, oregano, parsley, lemon juice, and rice. Bring to a boil.
  • Cover and simmer over medium-low heat for 10 minutes or until the chicken is cooked through.
  • Remove from the heat and let stand for 5 minutes.

Serves: 4
