Gardenville Garden Bake

Ingredients
- 1 cup zucchini, thinly sliced
- 1 large tomato, chopped (1 cup)
- 1 medium onion, grated (1 cup)
- 1/2 cup fat-free cholesterol free egg product or 2 eggs
- 1/3 cup grated Parmesan or Romano cheese
- 1 cup fat-free milk
- 1/8 tsp. pepper
- 1 tsp. oregano or basil
- 1/2 cup reduced fat baking mix (e.g. Bisquick®)
Directions
- Preheat oven to 400 degrees.
- Grease with cooking spray a 9-inch pie plate or 8 x 8 baking dish.
- Layer zucchini, tomato, and onion in pie plate.
- Beat the eggs and then stir in remaining ingredients until blended.
- Pour into pie plate.
- Bake at 400 degrees about 40 minutes or until knife inserted in center comes out clean.
- Cool 5 minutes.
Serves: 6
