Cobalt Ridge Chicken and Dumplings

Ingredients

  • 1 1/4 lbs. boneless chicken, cut in slices
  • 4 carrots, thinly sliced
  • 3 celery ribs, sliced
  • 1 small onion, diced
  • Vegetable cooking spray
  • 3 14.5 oz. cans fat-free chicken broth
  • 1 2/3 cups reduced fat baking mix
  • 2/3 cup fat-free milk

Directions

  • Saute chicken in a large pot coated with cooking spray over medium-high heat about 5 minutes.
  • Add celery, carrots, and onion and saute 6 minutes or until tender.
  • Stir in broth and bring to a boil.
  • In the meantime, in a bowl stir together baking mix and milk until blended.
  • Drop dumpling mixture by teaspoons into boiling broth and stir.
  • Cover, reduce heat and simmer, gently stirring occasionally for 8 minutes.

Serves: 4-6

Note: Broth automatically thickens into a gravy once dumplings begin to cook.
