Cobalt Ridge Chicken and Dumplings

Ingredients
- 1 1/4 lbs. boneless chicken, cut in slices
- 4 carrots, thinly sliced
- 3 celery ribs, sliced
- 1 small onion, diced
- Vegetable cooking spray
- 3 14.5 oz. cans fat-free chicken broth
- 1 2/3 cups reduced fat baking mix
- 2/3 cup fat-free milk
Directions
- Saute chicken in a large pot coated with cooking spray over medium-high heat about 5 minutes.
- Add celery, carrots, and onion and saute 6 minutes or until tender.
- Stir in broth and bring to a boil.
- In the meantime, in a bowl stir together baking mix and milk until blended.
- Drop dumpling mixture by teaspoons into boiling broth and stir.
- Cover, reduce heat and simmer, gently stirring occasionally for 8 minutes.
Serves: 4-6
Note: Broth automatically thickens into a gravy once dumplings begin to cook.
