Capitol View Cabbage-Rice Bake

Ingredients
- 1/2 head cabbage, chopped
- 2 tsp. extra virgin olive oil
- 1 cup onion, chopped
- 3 cups water
- 1 28 oz. can crushed tomatoes in puree
1 cup brown rice, uncooked
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1/3 cup water
- 1/4 tsp. salt
- Grated Parmesan or Romano cheese, optional
Directions
- Preheat oven to 350 degrees.
- Heat olive oil in a large skillet over medium heat.
- Add cabbage and onion to the skillet and saute 1-2 minutes.
- Stir in water, crushed tomatoes, rice, salt, and oregano.
- Spoon mixture into an 13 x 9 baking pan.
- Tightly cover with aluminum foil and bake at 350 degrees for 50 minutes.
- Good served with grated Parmesan or Romano cheese sprinkled on top.
Serves: 6
Note: For a variation, brown lean ground beef and add to mixture before baking.
