Capitol View Cabbage-Rice Bake

Ingredients

  • 1/2 head cabbage, chopped
  • 2 tsp. extra virgin olive oil
  • 1 cup onion, chopped
  • 3 cups water
  • 1 28 oz. can crushed tomatoes in puree
  • 1 cup brown rice, uncooked
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/3 cup water
  • 1/4 tsp. salt
  • Grated Parmesan or Romano cheese, optional

Directions

  • Preheat oven to 350 degrees.
  • Heat olive oil in a large skillet over medium heat.
  • Add cabbage and onion to the skillet and saute 1-2 minutes.
  • Stir in water, crushed tomatoes, rice, salt, and oregano.
  • Spoon mixture into an 13 x 9 baking pan.
  • Tightly cover with aluminum foil and bake at 350 degrees for 50 minutes.
  • Good served with grated Parmesan or Romano cheese sprinkled on top.

Serves: 6

Note: For a variation, brown lean ground beef and add to mixture before baking.
