Brookside Baked Fish

Ingredients
- 1 10 oz. frozen chopped spinach
- 1 garlic clove, minced
- 1 14.5 oz. can diced tomatoes
- Oregano, as desired
- 1 lb. tilapia fillets or other white fish
- 1 tsp. extra virgin olive oil
- Grated Romano or Parmesan cheese (1 T. for each fillet)
Directions
- Preheat oven to 425 degrees.
- Meanwhile, microwave frozen spinach for three minutes on high.
- Spread the spinach on the bottom of an ungreased oblong baking dish.
- Sprinkle minced garlic over the spinach.
- Spread tomatoes over the spinach.
- Sprinkle oregano over the tomatoes.
- Place tilapia fillets on top of tomatoes.
- Drizzle 1 teaspoon olive oil on fillets.
- Sprinkle grated cheese on each fillet.
- Bake at 425 degrees for 25 minutes or until fish flakes.
Serves: 4
