Brookside Baked Fish

Ingredients

  • 1 10 oz. frozen chopped spinach
  • 1 garlic clove, minced
  • 1 14.5 oz. can diced tomatoes
  • Oregano, as desired
  • 1 lb. tilapia fillets or other white fish
  • 1 tsp. extra virgin olive oil
  • Grated Romano or Parmesan cheese (1 T. for each fillet)

Directions

  • Preheat oven to 425 degrees.
  • Meanwhile, microwave frozen spinach for three minutes on high.
  • Spread the spinach on the bottom of an ungreased oblong baking dish.
  • Sprinkle minced garlic over the spinach.
  • Spread tomatoes over the spinach.
  • Sprinkle oregano over the tomatoes.
  • Place tilapia fillets on top of tomatoes.
  • Drizzle 1 teaspoon olive oil on fillets.
  • Sprinkle grated cheese on each fillet.
  • Bake at 425 degrees for 25 minutes or until fish flakes.
