Afton Chase Asparagus Bake

Ingredients
- 2 T. light butter
- 1 lb. asparagus (choose thin stalked ones)
- 2 T. grated or finely chopped onion
- 2 T. finely chopped celery
- 2 medium tomatoes, sliced
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 2 T. grated parmesan or romano cheese
- extra virgin olive oil
Directions
- Preheat oven to 350 degrees and melt butter in baking dish.
- Place asparagus in dish horizontally to fit the width of the dish.
- Sprinkle with onion.
- Arrange tomato slices on top down the center of the asparagus.
- Top tomato slices with celery.
- Sprinkle with basil, oregano, and cheese.
- Drizzle olive oil all over.
- Bake at 350 degrees approximately 30-40 minutes or until asparagus can be pierced with a fork.
- Do not cover while baking.
